Coffee Dose Encinitas: North County San Diego's Most Anticipated Coffee Shop Opening Has Officially Arrived

Coffee Dose Encinitas Review: New San Diego Coffee Shop & Brunch Club

Coffee Dose represents a blend of specialty coffee culture meets full-service brunch energy, wrapped in impeccable branding and a seed-oil-free menu and trust us when we say, the team behind Coffee Dose did not come to play.

They have a proven model. They are running full force ahead with expansion plans that are quickly taking over Socal. With a Palm Springs location already in the works (slated for Fall 2026) and existing locations spanning Costa Mesa's flagship at 2675 Irvine Ave , the adorable MicroDose Drive Thru on Newport Blvd , the Clubhouse in Laguna Hills , and the shipping-container-chic Dose in the Box in Irvine , Coffee Dose has become more than just a coffee shop, it's a lifestyle brand with serious momentum.

And now? They've officially planted their flag in Encinitas at 162 S Rancho Santa Fe Rd, introducing their first-ever Brunch Club concept with an even fuller menu than any of their previous locations.

This isn't just another café opening. This is Coffee Dose leveling up.

We had the incredible opportunity to attend their preview event before the grand opening a couple weeks back, and what we experienced was a masterclass in hospitality, branding, and genuine culinary thoughtfulness.

After years of watching San Diego's coffee scene evolve from basic drip stations to thoughtfully curated third-wave experiences, I can confidently say that Coffee Dose's arrival in Encinitas feels like the cherry on top of North County's rapidly growing culinary renaissance. And as someone who's spent the last 11 years documenting the best brunch spots around the world and the last decade specifically dedicated to San Diego's dining scene through Gals That Brunch I've learned to recognize when a new opening is more than just hype.

Coffee Dose is more than hype.

One of Those Rare Afternoons Where Content Is the Assignment

One of my favorite parts of preview & press visits is that they are one of the rare times where content is the assignment.

At our actual Gals That Brunch events, we are deeply committed to presence. Phones down as much as possible. Humans first. Conversations first. Table first.

But on preview days like this one? Liz (who helps create content for our Gals That Brunch San Diego chapter) and I got to be silly girls for the afternoon. The best kind. Moving plates three inches for better lighting. Laughing over the fact that her drink matched her dress almost too perfectly. Taking our time with each dish. Making mental notes. Asking ourselves, "Would we bring the girls here?"

Spoiler: the answer is yes.

Shoutout to Jordan , who leads their socials and was absolutely amazing to work with throughout the preview event. And major love to Libby (sp?) , who mentioned to me that this Encinitas location is their first Brunch Club concept, a fuller, more food-forward experience than their other spots. That detail matters, because it signals intention. Coffee Dose isn't just copy-pasting a winning formula. They're evolving it.

The Coffee Dose Story: From 88 Square Feet to Southern California Domination

Before we dive into the deviled eggs (and oh, we will), let's talk about the visionaries behind Coffee Dose: Jeni and Oscar Castro .

Their story is one of those rare hospitality origin tales that feels almost cinematic. Coffee Dose didn't begin as a sprawling café with a full brunch menu and a merch wall that rivals your favorite streetwear brand. It started as an 88-square-foot corner inside a hair salon in Costa Mesa. Yes, you read that right.. 88 square feet. For context, that's smaller than most walk-in closets.

But what Jeni and Oscar lacked in square footage, they made up for in vision, grit, and an unwavering commitment to quality. They weren't just serving coffee, they were building a brand, a community, and a lifestyle. And people noticed.

From that tiny corner, Coffee Dose expanded into their flagship Costa Mesa location at 2675 Irvine Ave, which quickly became a beloved fixture in Orange County's specialty coffee scene. Then came the MicroDose Drive Thru on Newport Blvd, a quaint pink building surrounded by desert-style plants that feels like a beachy oasis. Next was the Clubhouse in Laguna Hills at 23382 Mill Creek Drive, followed by the ultra-cool Dose in the Box shipping container concept in Irvine at 7 Corporate Park.

And now? Encinitas at 162 S Rancho Santa Fe Rd, open Monday through Sunday from 7AM to 5PM. Plus a Palm Springs flagship coming Fall 2026 at 725 S Palm Canyon Dr.

What makes their expansion so impressive isn't just the speed, it's the intentionality. Every location feels cohesive yet distinct. The branding is impeccable. The menu is thoughtfully curated. The design is swoon-worthy. And perhaps most importantly, the food and drinks are approved good, not just pretty.

Coffee Dose Encinitas review by Gals That Brunch Club

A restaurant made for juuuust us??? HOW SWEEET :)

Why Encinitas? Why the Brunch Club Concept?

Encinitas has always been a special pocket of San Diego. It's got that laid-back surf town energy mixed with a growing appreciation for culinary excellence. Over the last few years, the area has seen an influx of exciting new restaurants, coffee shops, and boutique experiences that are transforming it into a legitimate dining destination.

The shopping center at 162 S Rancho Santa Fe Rd is part of that transformation. It's becoming a little hub of cool, unexpected spots that you wouldn't necessarily expect to find in a strip mall but that's exactly what makes it so charming. Coffee Dose feels like the final piece of the puzzle, the cherry on top that makes the whole corner worth the drive.

And here's what makes this location extra special: this is Coffee Dose's first Brunch Club concept . While their other locations focus primarily on specialty coffee with some menu items, Encinitas goes all-in on food. We're talking brunch classics, lunch staples, shareable plates, and a beverage program that goes way beyond your standard latte. This is a full dining experience designed for groups, for lingering, for celebrating.

Walking Into Coffee Dose: When Design Meets Intention

Let's talk aesthetics, because honestly, they deserve their own paragraph (or five).

The moment you walk into Coffee Dose, you're hit with this overwhelming sense that every single detail was considered . From the signage to the seating, from the lighting to the merch wall, everything feels intentional. It's not trying too hard, but it's also not phoning it in. It's that perfect sweet spot where design elevates the experience without overshadowing it.

The space is bright, airy, and effortlessly cool. It's the kind of place where you could bring your laptop and camp out for hours, meet a friend for a coffee date, host a tiny Barbie-retro diner themed birthday party (yes, really), or swing by after school drop-off for a much-needed moment of peace. It's versatile in the best way.

And can we talk about the merch? Because Coffee Dose clearly understands that branding isn't just a logo, it's a lifestyle. Their merch selection is chef's kiss . Think cute coffee mugs, keychains, t-shirts, and other pieces that you'd actually want to own and wear. It's thoughtful, it's fun, and it's a testament to how seriously they take every aspect of the brand.

One small note: if you're bringing kids and you're not a fan of the occasional well-placed cheeky phrase in the décor, just know that Coffee Dose leans into a playful, slightly irreverent vibe. It's not a warning, just a heads-up. The space is still absolutely family-friendly in terms of atmosphere and menu.

The Food: Where Coffee Dose Goes From Great to Unforgettable

Coffee Dose Encinitas review by Gals That Brunch Club
Coffee Dose Encinitas review by Gals That Brunch Club

Okay, let's get into the good stuff. Because while the vibes are immaculate and the branding is top-tier, none of that matters if the food doesn't deliver.

Spoiler alert: the food delivers.

The Disco Cakes (Pancakes That Deserve Their Own Fan Club)

Let's start with the pancakes, affectionately known as the Disco Cakes . These aren't your standard diner pancakes. These are ungodly in the best way possible. Fluffy doesn't even begin to describe them. They're cloud-like, pillowy, and somehow manage to be both light and indulgent at the same time.

I'm not typically a sweets person, I usually prefer savory over sweet any day of the week, but even I couldn't resist these. My one note? I'd personally get the sauce on the side. Not because it's bad (it's delicious), but because the pancake itself is so perfect that I wanted to appreciate it in its purest form.

Also worth noting: they offer gluten-free options , which a little birdie mentioned to me during our visit. Inclusivity in the menu is always a win.

The Potato Latke (An Unexpected Flavor Explosion)

Now, let's talk about the dish that genuinely surprised me: the potato latke .

At first glance, you might think, "Okay, it's a latke. Hash browns, basically." And if you're not already a latke enthusiast, you might even skip right past it on the menu. But here's why you shouldn't: this latke is a masterclass in flavor layering and textural contrast.

Imagine perfectly crisp hash browns as the base, golden, crunchy, with that satisfying bite. Then add a creamy, luxurious sauce that balances richness with brightness. Layer in a subtle sweetness from apple, which adds just enough tang to keep things interesting. And finally, top it all off with salmon caviar , which brings a briny, umami pop that ties everything together.

On paper, those flavors might sound like they shouldn't work. Potatoes, apples, cream, caviar? But in practice, it's a revelation. It's one of those dishes where every bite is a little adventure, and you find yourself going back for more even when you're already full.

The potatoes were perfectly crisp, the sauce was velvety, and the whole thing was just fun . It's the kind of dish that makes you want to grab your friend's arm and say, "You have to try this."

The Deviled Eggs (A Shareable Stunner)

If you're looking for something to share with the table, the deviled eggs are an absolute must. They're refreshing, flavorful, and beautifully presented. There's something about a well-executed deviled egg that just feels celebratory, and Coffee Dose nails it.

These are perfect for a group brunch situation—light enough that they won't fill you up before your entrées arrive, but interesting enough that they feel special.

The Burger (Aussie-Inspired Perfection)

Okay, let's talk about the burger, because do not sleep on this burger .

This is an Aussie-style burger featuring high-quality ground beef, sautéed onions, Gruyère cheese, and bacon. It's indulgent without being over-the-top, and every component is thoughtfully chosen. The Gruyère adds a nutty, slightly sweet richness that elevates it beyond your standard cheeseburger. The sautéed onions bring sweetness and depth. The bacon adds that smoky, salty crunch.

It's the kind of burger that makes you slow down and actually savor each bite instead of mindlessly inhaling it (though no judgment if you do that too).

The Fries (And Yes, Let's Talk Seed Oils)

Coffee Dose offers tater fries , and here's where I want to touch on something that matters to me personally: seed oils .

The non-sexy part of dining out is that cooking oils, frying fats, sauces, dressings, and prep ingredients are often invisible. You do not always see them. You do not always know what is being used. And for people who are trying to be more mindful about what they consume, that can be frustrating.

So when a restaurant is willing to say, "Here is what we use. Here is what we do not use. Here is how we are thinking about the menu," that feels meaningful.

Whether you personally avoid seed oils or not, there's no denying they've become one of the biggest conversations happening in hospitality right now. Diners are asking more questions about ingredients than ever before, and restaurants are beginning to respond. Tanner's Prime Burgers in Oceanside helped lead that charge locally with beef tallow fries, and you can see how that conversation is slowly starting to ripple through San Diego restaurants. More diners are paying attention. More menus are calling it out. More people want the fries, yes, but they also want the transparency.

Tallow gives fries a richness and depth that feels old-school in the best way. It is crisp. It is savory. It has that "why do these taste more like fries?" quality.

And Coffee Dose bringing that into a brunch-club environment feels smart. It makes the seed-oil-free conversation feel less clinical and more celebratory. Less "wellness lecture," more "great, now give me the fries."

The Drinks: Mocktails, Matcha, and Everything In Between

Let's move on to the beverage program, because Coffee Dose isn't just about the coffee (though the coffee is excellent).

The Mary Matcha

I ordered the Mary Matcha , which featured matcha, lavender syrup, and another ingredient I'm blanking on (definitely check their menu for the full breakdown). It was refreshing, floral, and perfectly balanced. A tiny bit too sweet for me (again not a sweets gal and I’m sure can be adjusted in ordering), but it was not too earthy, just right for a mid-afternoon pick-me-up.

The Valley Girl

Liz ordered the Valley Girl , which, and I'm not saying this was intentional, but, perfectly matched her dress. Secrets kept. It was vibrant, fun, and exactly the kind of drink that makes you want to take a million photos before you take your first sip.

The Cucumber Mockarita

Now, let's talk mocktails, because I'm officially entering my mocktail era .

I love a good cocktail as much as the next person, but sometimes I don't want to feel like I need a nap immediately after brunch. I want something refreshing, fun, and flavorful that lets me stay present and energized for the rest of the day.

Enter the Cucumber Mockarita .

This drink was so good . Flavor-forward, refreshing, and topped with the cutest cucumber garnish. It had that perfect balance of savory and bright, and it felt like a grown-up beverage without any of the alcohol.

The Barbie Dream Mocktail

Liz also got the Barbie Dream Mocktail , and after stealing a sip (as one does), I can confirm it's incredibly refreshing and perfect if you want something on the lighter, sweeter side.

Mocktails are having a major moment right now, and Coffee Dose is leaning into that trend in the best way. Gallup reported that only 54% of U.S. adults now say they drink alcohol, the lowest number in its trend, while a majority also say moderate drinking is bad for health. Translation: diners are rethinking what they want in their glass, and restaurants that are not taking note might be missing the memo. Coffee Dose understood the assignment. These are not afterthought “virgin” versions of cocktails. They are thoughtfully crafted beverages that stand on their own.

The Eight Things I Look For In A Brunch Spot (And How Coffee Dose Stacks Up)

A little-known fact about me: I am an absolute foodie. Which probably is not that shocking considering I have spent the better part of eleven years hosting brunches.

Over the years, people have asked me what makes a restaurant stand out. And the answer is, I am evaluating far more than just the food.

There are eight categories I mentally score every restaurant against whenever we host a Gals That Brunch event.

1. Atmosphere

Not just aesthetics. Atmosphere. How does the space make people feel?

Coffee Dose nails this. The space is playful, bright, and energizing without being overwhelming. It feels like a place designed for celebration.

2. Hospitality

Hospitality is different from service. Hospitality is how welcomed people feel. Do guests feel seen? Do they feel valued? Do they feel like someone is genuinely happy they are there?

Shoutout to Libby , who took incredible care of us during our visit. She was warm, knowledgeable, and made the whole experience feel special.

3. Service

Timing. Attention to detail. Problem-solving. Communication. Execution.

Everything ran smoothly. Even during a preview event, the team was on point.

4. Menu Diversity

Can a variety of personalities, tastes, dietary needs, and comfort levels find something they are excited about?

Absolutely. From gluten-free pancakes to Aussie burgers to deviled eggs to mocktails, there's something for everyone.

5. Food Quality

Not just whether something tastes good, but consistency, creativity, execution, and freshness. I want to know where these ingredients came from. I want to know how things on the menu were thought about.

The potato latke alone proves they're thinking deeply about flavor combinations. The Disco Cakes prove they care about execution. The seed-oil-free fries prove they care about sourcing.

6. Beverage Programming

Coffee. Tea. Mocktails. Specialty drinks. The little things that elevate an experience from a meal to an occasion. The garnishments. The DEETS.

The mocktail program is stellar. The Mary Matcha was thoughtful. The Valley Girl was Instagram gold. The Cucumber Mockarita was legitimately delicious.

7. Value

Not necessarily inexpensive. Value. Did the experience feel worth what was paid? Did guests leave feeling delighted rather than disappointed?

Yes. The portions were generous, the quality was high, and the experience felt special.

8. Memorability

Because at the end of the day, that is what we are really chasing. Will people still be talking about this place on the drive home? Will they tell a friend? Will they come back? Will they remember it next month?

I'm still thinking about that latke. And I'm already planning my next visit.

Now, there is technically a ninth category . A secret category. One I never tell anyone…

And no, I am not sharing what it is today. You'll just have to ask me at brunch sometime and I'll give you my very passionate plea of why it matters so much.

But here's what I will say: Coffee Dose didn't have it. And honestly? Sometimes the vibes make up for it. Sometimes the food is so good and the energy is so right that you squeal anyway because it's just so cute and you can't help but love it.

That's Coffee Dose.

Coffee Dose Feels Like It Was Made for Us

Which brings me to our unofficial Gals That Brunch ranking system.

Coffee Dose feels like one of those places. It feels like it was made for us, which is almost rude because we cannot fit the entire community inside.

The brunch club language. The playful drinks. The menu range. The photo moments. The mocktails. The seed-oil-free options. The group-friendly energy. The sense that you could come here on a random weekday and leave feeling like your day got a little more fun.

That is what we are always looking for.

Not just food.

A feeling.

Is Coffee Dose Encinitas Worth Checking Out?

Yes.

Coffee Dose Encinitas is absolutely one of the new coffee shops in San Diego worth adding to your list, especially if you are searching for Encinitas coffee shops , new brunch spots in San Diego , or North County San Diego restaurants with personality.

It is not trying to be quiet. It is not trying to be neutral. It is not trying to please every single person with beige walls and a plain latte.

It is bold. It is playful. It is cheeky. It is food-forward. It is mocktail-friendly. It is merch-ready. And it has enough strong menu moments to make it more than just a cute stop.

This is a restaurant that knows who it is and what it wants to be. And in a world where so many new openings feel like they're trying to be everything to everyone, that clarity is refreshing.

Would I bring the Gals That Brunch crew here? Absolutely.

Would I bring out-of-town guests here? 100%.

Would I come back on a random Tuesday just because? Already planning it.

Welcome to Encinitas, Coffee Dose. We're so glad you're here.
